| ABOUT THE TRAIL
The Southern Foodways Alliance
and TABASCO created the Southern
Boudin Trail in an effort to document the history, tradition, and
culture of boudin. This is an on-going project. There will be regular
additions to the oral history archive, as well as to the locations
on our interactive map.
The Southern Boudin Trail is also a resource for cultural
tourists who would like to hit the road in search of authentic and
unique culinary experiences. We hope you will use the Boudin Trail
as your guide.
